Scallion pancake(蔥抓餅) is a common Taiwanese breakfast food. Although it probably has origins in northern China related to shao bing, it has evolved into a recognized Taiwanese dish. It is commonly served with sweet chili sauce(甜辣醬) or sweet, thick soy sauce, like Japanese tare.

Ingredients
- 2 cup wheat flour
- ¼ tsp salt
- ¾ cup water
- 4 scallion greens, chopped
- 2 tbsp sesame oil or other oil
Directions
- combine flour, salt
- gradually mix in water until combined into dough
- knead
- rest dough at least 10 minutes
- flatten into wide rectangle
- spread oil, scallion on dough, leaving edges uncoated
- roll and close each end
- twist to divide into pieces, closing the ends
- flatten sideways and roll flat
- cook until lightly browned on each side
- serve
