Shao Bing

Shao bing(燒餅) is a layered small flatbread or cracker popular throughout China. It is a traditional food of Lu and Zhongyuan cuisines.

Shao bing is often garnished with sesame seeds. Sometimes scallions or other ingredients are added. It is a common breakfast, often paired with egg or soy milk. It may be served plain or with savory dipping sauce.

Recipe

Ingredients

  • 2 cup + ½ cup all-purpose wheat flour
  • yeast
  • salt
  • ¾ cup warm water
  • ½ cup sesame oil
  • sesame seed (optional)
  • scallion, finely chopped (optional)

Directions

  • combine 2 cup flour, yeast, salt, water
  • knead into dough
  • let dough rise 30 to 60 minutes
  • combine ½ cup flour, sesame oil, salt, scallion
  • knead dough
  • roll flat
  • spread flour oil mixture on dough
  • roll up dough
  • divide into 4 to 8 pieces
  • fold each piece into thirds so oil mixture is enclosed
  • dip in sesame seeds (optional)
  • roll flat
  • pan cook until lightly browned, flipping as necessary
  • serve
