Umuni

Umuni(ウムニー) is a simple Ryukyuan sweet made from mashed purple sweet potato(紅いも beni-imo). Purple sweet potato is popular in the Ryukyu islands and widely known for its nutrient value.

Shikuwasa(シークヮーサー) is a rare citrus similar to calamansi and native to Ryukyu. Its juice(or juice from another citrus) can be added to transform the color of umuni from deep purple to a more vibrant fuschua and add a small punch of citrus flavor.

Ingredients

  • 2 purple sweet potato(紅いも), peeled
  • ⅛ tsp salt
  • 1 tbsp unrefined brown sugar(黑糖)
  • 1 tsp shikuwasa juice or calamansi juice or other citrus juice

Method

  • boil sweet potato until soft
  • drain excess water
  • add salt, sugar
  • mash until smooth
  • add shikuwasa juice
  • mix
  • serve
