Ube Halaya

Ube halaya is a sweet and creamy Filipino dessert made with grated or mashed ube, a type of purple yam. It is popular among Tagalog people in Luzon and can be found elsewhere too.

This recipe is dairy-free and uses coconut milk. It is best chilled and can even be turned into ice cream. Ube halaya makes a great topping for halo-halo. It makes a good sweet treat on its own too.

method

  • boil ube, water
  • simmer
  • mash
  • add coconut cream, sugar
  • simmer until thickened
  • let cool
  • serve or chill
