Terong Balado

Terong balado is a Minang dish of eggplant(terong) cooked in chili sauce(balado).

It is normally made with long Chinese eggplant. Serve with rice.

Ingredients

  • 2 clove garlic
  • 2 red bird eye chili
  • 2 red cayenne chili or seeded red bird eye chili
  • ¼ tsp salt
  • 1 shallot, sliced
  • 2 kaffir lime leaf or Indonesian bay leaf(daun salam)
  • ½ tbsp palm sugar
  • 1 tomato, chopped, or tamarind water
  • 2 Chinese eggplant or similar eggplant, trimmed and cut into chunks

Directions

  • steam eggplant
  • pound garlic, chili, salt, shallot
  • saute
  • mix in sugar, tamarind water, kaffir lime leaf
  • add eggplant
  • stir
  • serve
