Terong balado is a Minang dish of eggplant(terong) cooked in chili sauce(balado).
It is normally made with long Chinese eggplant. Serve with rice.

Ingredients
- 2 clove garlic
- 2 red bird eye chili
- 2 red cayenne chili or seeded red bird eye chili
- ¼ tsp salt
- 1 shallot, sliced
- 2 kaffir lime leaf or Indonesian bay leaf(daun salam)
- ½ tbsp palm sugar
- 1 tomato, chopped, or tamarind water
- 2 Chinese eggplant or similar eggplant, trimmed and cut into chunks

- steam eggplant
- pound garlic, chili, salt, shallot
- saute
- mix in sugar, tamarind water, kaffir lime leaf
- add eggplant
- stir
- serve
