Spaghetti with Garlic and Oil

Spaghetti with garlic and oil(spaghetti aglio e olio) is a simple and traditional pasta dish of Neapolitan cuisine.

Spaghetti is made with semolina dough, which should be not too dry and not too moist. Mix in just enough water until the dough is smooth.

Ingredients

  • 4 cup durum wheat flour(fine semolina)
  • ½ tsp salt
  • 1½ – 2 cup water

Directions

  • combine flour, salt
  • gradually mix in water until combined into dough
  • knead
  • rest dough 1 to 2 hours
  • knead
  • shape or press through pasta extruder
  • use or dry about 3 days to store

  • 1 tsp salt
  • 1 tbsp olive oil

Directions

  • boil water
  • add noodles
  • simmer until cooked, about 5 minutes
  • drain
  • mix in garlic, salt, olive oil
