Spaghetti is a type of pasta or noodles traditionally made from durum wheat flour. It is traditional to Neapolitan cuisine and Sicilian cuisine of southern Italy, and it has become famous around the world.
Spaghetti is traditionally made with a tool known as chitarra, or guitar, where the dough is pressed through close, evenly spaced strings. Made this way, it is known as spaghetti alla chitarra. Today, spaghetti is often made with a pasta extruder.

- 4 cup durum wheat flour(fine semolina)
- salt
- 1½ – 2 cup water
Directions
- combine flour, salt
- gradually mix in water until combined
- knead into dough
- rest dough 1 to 2 hours
- knead
- press through extruder
- use fresh or dry about 3 days and store
