Winter melon nbushi(シブインブシー shibui nbushi) is Ryukyu-style braised winter melon with miso.
Winter melon(シブイ shibui), also known as wax gourd, is a large gourd or melon with a thick, mild-flavored flesh. A single winter melon can be large enough to use in multiple dishes. To prepare it, cut the amount of winter melon you will use and remove the peel and seeds. Chop it into smaller pieces, then stew with flavoring ingredients.
Nbushi(ンブシー) can also be made with other ingredients, such as luffa.

Ingredients
- 1 lb winter melon, peeled and seeded and chopped
- ½ cup water or dashi
- 2 tbsp unrefined brown sugar(黑糖)
- 1 tbsp sake
- 2 tbsp miso
- 2 scallion, chopped
Method
- boil winter melon, water
- add sugar, sake, miso
- simmer until tender and liquid reduced, about 30 minutes
- garnish with scallion
- serve
