Shao bing(燒餅) is a layered small flatbread or cracker popular throughout China. It is a traditional food of Lu and Zhongyuan cuisines.
Shao bing is often garnished with sesame seeds. Sometimes scallions or other ingredients are added. It is a common breakfast, often paired with egg or soy milk. It may be served plain or with savory dipping sauce.

- 2 cup + ½ cup all-purpose wheat flour
- yeast
- salt
- ¾ cup warm water
- ½ cup sesame oil
- sesame seed (optional)
- scallion, finely chopped (optional)
Directions
- combine 2 cup flour, yeast, salt, water
- knead into dough
- let dough rise 30 to 60 minutes
- combine ½ cup flour, sesame oil, salt, scallion
- knead dough
- roll flat
- spread flour oil mixture on dough
- roll up dough
- divide into 4 to 8 pieces
- fold each piece into thirds so oil mixture is enclosed
- dip in sesame seeds (optional)
- roll flat
- pan cook until lightly browned, flipping as necessary
- serve
