Sesame Sauce Noodles

Sesame sauce noodles(麻醬麵 májiàngmiàn) is a popular and simple traditional noodle dish from Old Beijing(老北京).

Sesame sauce noodles are simply noodles with sesame sauce and usually cucumber. Other toppings like scallions and blanched greens can be added. The sauce is made from sesame paste(also known as tahini) and seasonings like soy sauce. It ranges from slightly thick to runny. Mix in water thoroughly for the desired consistency.

Ingredients

  • 4 tbsp sesame paste(麻醬)
  • ½ tsp salt
  • 1 tbsp soy sauce(生抽)
  • 2 – 6 tbsp water
  • 1 tsp rice vinegar(陳醋)
  • noodles
  • 1 cucumber, cut into matchsticks
  • 1 scallion, finely sliced (optional)

Directions

  • combine sesame paste, salt, soy sauce, water, vinegar for sauce
  • place noodles, cucumber, scallion in serving bowls
  • add sauce
  • serve
