Sate Tuna

Sate tuna(pronounced satay tuna) is skewered seasoned tuna bites, a specialty from northern Sulawesi Island, Indonesia. It is a popular street food and can be easily made at home and paired with other dishes.

Recipes for sate tuna widely vary. In the recipe below, tuna cubes are marinated, then the skewered cubes are grilled. Sate tuna can be served with spicy dipping sauce.

Tuna and similar fish are abundant in the waters around northern Sulawesi. In addition to sate, tuna is also roasted(bakar), cooked in tamarind soup(kuah asam), and made into woku, which is a Gorontalo specialty similar to curry.

Ingredients

  • 1 lb tuna fillet, cubed
  • 1 tsp salt
  • 2 calamansi juice or lime juice or tamarind water
  • 1 clove garlic, peeled
  • 2 shallot, peeled and sliced
  • 1 tbsp piece galangal and/or ginger
  • 1 tsp coriander seed
  • 2 candlenut (optional)
  • 2 tbsp kecap manis or palm sugar
  • coconut oil as needed

Directions

  • combine tuna, salt, calamansi
  • marinate 15 to 30 minutes
  • pound garlic, shallot, galangal, coriander, candlenut
  • mix marinated tuna, pounded spices, kecap manis
  • skewer tuna pieces
  • grill in coconut oil, flipping until browned on both sides
