Sambal tempoyak is a sauce made from fermented durian paste. It is part of Palembangese cuisine as well as other Malay cuisines of western Kalimantan, eastern peninsular Malaysia, and elsewhere.
Start with a basic sambal of chili and shallot, then mix in tempoyak, or fermented durian paste. Variations may use lemongrass, anchovies, or other ingredients to add flavor. Sambal tempoyak is a great side for rice and fish.
