Pogi kimchi(포기김치) is kimchi made from napa cabbage heads, generally halved lengthwise from the base and sometimes quartered to make handling and storing easier. It is similar to and sometimes referred to as whole cabbage kimchi(통배추김치 tong baechu gimchi).
Recipe
Main Ingredients
- 1 head napa cabbage(배추 baechu), halved or quartered
- 1 cup salt
- 6 – 8 cup water
Paste Ingredients
- 2 – 4 clove garlic, minced
- 1 tbsp piece ginger, minced
- 1 tsp salt
- 4 – 6 tbsp red chili powder(고춧가루 gochugaru), coarse
- 2 scallion, chopped
- 4 – 8 tbsp water
Directions
- spread salt between cabbage layers
- add water to cover
- soak at least 1 hour
- drain and rinse thoroughly
- mix garlic, ginger, salt, chili powder, scallion, water to make paste
- spread paste between cabbage layers until well coated
- pack into container and seal
- let sit until small bubbles appear around edges, 2 to 3 days
- serve or store in refrigerator
