Fish Pinamalhan

Pinamalhan nga isda is an Ilonggo dish consisting of fish braised in vinegar and soy sauce until the liquid mostly dries up. Pinamalhan refers to a dry stewed dish; in this case, fish is the main ingredient.

Modern pinamalhan is usually made with soy sauce and retains some liquid which is served with the fish, like adobo sauce.

Milkfish(bangus) or smaller fish work well for this recipe. Vegetables are not normally added except for seasoning.

Pinamalhan nga isda is the Ilonggo counterpart to paksiw na isda, another fish dish stewed in vinegar with vegetables.

ingredients

  • 1 milkfish(bangus) or other fish, scaled and gutted and cleaned, cut into pieces
  • 2 cup coconut vinegar(sukang tuba) or other vinegar
  • soy sauce or salt
  • salt
  • muscovado sugar
  • black peppercorn
  • garlic, smashed
  • shallot, chopped
  • ginger, sliced
  • bird eye chili(siling labuyo), chopped

method

  • boil fish, vinegar, soy sauce, salt, sugar, peppercorn, garlic, shallot, ginger
  • simmer until fish cooks through and liquid is reduced
  • serve
