Peanut Sambal

Peanut sambal(sambal kacang) is a Javanese peanut sauce. In central Java, peanut sambal tends to be sweet and not very spicy. A thinner, spicier version is made in eastern Java. Peanut sambal is also enjoyed in Sundanese cuisine.

Peanut sambal is traditionally made with mortar and pestle, though many people today use a food processor to make the process easier.

Peanut sambal is used to make various salads such as pecel and karedok. It can also be served as a dip for cucumber or fresh vegetables.

Ingredients

  • 2 clove garlic
  • 4 bird eye chili
  • ½ tsp salt
  • 1 tbsp piece galangal (optional)
  • 2 shallot, sliced
  • 1 tbsp palm sugar(gula jawa)
  • 2 cup peanut, roasted
  • 1 – 2 lime juice or tamarind water (optional)
  • water

Directions

  • pound garlic, chili, salt, galangal, shallot, sugar, peanut, lime juice
  • mix in water to desired consistency
  • serve
