Miso soup is a popular and simple Japanese soup made with miso. Miso is a paste made from fermented soy, often with grains, salt, and koji.
Miso soup can use various types of stock, traditionally made with ingredients such as fish, kelp, or mushrooms. The vegan recipe below makes a kelp stock. Bonito flakes and shiitake are also common ingredients for stock.

Ingredients
- 4 cup water
- 1 piece(4″x8″) dried kelp(昆布)
- 4 tbsp miso(味噌)
- 1 block soft tofu, diced
- 1 tbsp wakame (optional)
- 1 scallion, finely chopped (optional)
Directions
- simmer water, kelp 10 to 15 minutes, keeping below a boil
- remove kelp
- mix in miso
- remove from heat
- add tofu, wakame, scallion
- serve
