Baba ghanoush(بابا غنوج) is a roasted eggplant dip usually seasoned with garlic, sesame, and lemon.
Baba ghanoush is similar to hummus and can also be served with pita bread or other flatbread.

Ingredients
- 2 eggplant
- 2 clove garlic, minced
- 1 tsp salt
- 1 – 2 tbsp sesame paste(tahini)
- ½ – 1 lemon juice
- 1 – 2 tbsp olive oil (optional)
- 1 tsp cumin powder (optional)
- 1 tsp paprika (optional)
- 1 tsp parsley, finely chopped (optional)
Directions
- roast eggplant until soft, 15 to 30 minutes at 425°F
- let cool
- peel and trim
- finely chop or mash (fork works)
- add garlic, salt
- mix in tahini, lemon
- chill (optional)
- garnish with olive oil, cumin, paprika, parsley
- serve
