Jing jiang pork strips or jing jiang rou si(京醬肉絲) is a traditional Beijing dish of thin meat strips in sweet and salty sauce. This vegan adaptation uses king oyster mushroom(杏鮑菇) instead of pork.
Jing jiang rou si is typically served with a thin flour pancake called chun bing(春餅) and finely sliced scallion; try making my chun bing recipe to go with it.

Ingredients
- 2 clove garlic, minced
- 4 king oyster mushroom(杏鮑菇), cut into thin strips
- 4 tbsp rice cooking wine(料酒) or water
- 4 tbsp soybean sauce(黃醬)[mix 2 tbsp dry soybean paste(幹黃醬), 2 tbsp water] or light soy sauce(生抽)
- 4 tbsp tian mian jiang(甜麵醬)
- 4 tbsp unrefined brown sugar or rock sugar
- 2 tbsp water (optional)
Directions
- saute garlic
- add mushroom, rice wine
- simmer until mushroom is fully cooked
- mix in soybean sauce, tian mian jiang, sugar, water(if too dry)
- simmer until sauce thickens
- serve
