Peanut tofu(ジーマーミ豆腐 jimami-dofu) is a traditional Ryukyuan food made from peanut(ジーマーミ jimami)[地豆] and sweet potato starch(ンムクジ nmu kuzu).
Long ago, peanut tofu was a royal court dish of the Ryukyu kingdom, prepared for special guests. Since the end of the Ryukyu kingdom, it has become a common food in the Ryukyu islands.
It is prepared by grinding peanuts and squeezing out the juice through a cloth, similar to making soymilk. To create the pudding texture, peanut juice is combined with a mixture of sweet potato starch and water and slowly heated until thick. The pudding is cooled and served with a sweet soy sauce.
Peanut Tofu Recipe
Ingredients
- 1 cup peanut, shelled, soaked overnight and drained, skin removed
- 3 cup water
- ½ cup sweet potato starch(芋くず)
Method
- grind peanut, water
- pour and squeeze peanut juice into a pan through soymilk cloth
- combine sweet potato starch, water
- mix into peanut juice
- heat over low to medium-low heat, stirring constantly until thickened
- transfer to mould
- let cool
- chill (optional)
- divide into pieces
- serve with sauce
Sauce Recipe
Ingredients
- 2 tbsp soy sauce
- 1-2 tbsp unrefined brown sugar(黑糖)
- 2 tbsp mirin [substitute sake or water]
Method
- boil soy sauce, sugar, mirin
- simmer until sugar dissolved
- let cool
- serve
