Focaccia

Focaccia is a leavened flatbread from Ligurian cuisine. It is generally made with olive oil and can have various toppings.

Focaccia Recipe

Ingredients

  • 2 cup all-purpose wheat flour
  • ¾ – 1 cup lukewarm water
  • ½ tsp instant yeast
  • ½ tsp salt
  • 2 tbsp olive oil
  • rosemary topping
  • coarse salt

Directions

  • combine yeast, water
  • rest until active (frothy), 5 – 10 minutes
  • mix in flour, olive oil, salt
  • knead into dough
  • let rise until doubled in size, 1 – 2 hours
  • coat with olive oil and press with fingers to shape
  • let rise until doubled in size again, 1 – 2 hours
  • preheat oven to 450°F
  • add rosemary topping onto dough
  • sprinkle with coarse salt
  • bake until golden, 15 – 20 minutes
  • brush with olive oil
  • serve

Rosemary Topping Recipe

Ingredients

  • 2 tbsp olive oil
  • 2 tbsp water
  • 4 clove garlic, minced
  • 1 tbsp rosemary, thyme, oregano, other herb, or a combination
