Focaccia is a leavened flatbread from Ligurian cuisine. It is generally made with olive oil and can have various toppings.


Focaccia Recipe
Ingredients
- 2 cup all-purpose wheat flour
- ¾ – 1 cup lukewarm water
- ½ tsp instant yeast
- ½ tsp salt
- 2 tbsp olive oil
- rosemary topping
- coarse salt
Directions
- combine yeast, water
- rest until active (frothy), 5 – 10 minutes
- mix in flour, olive oil, salt
- knead into dough
- let rise until doubled in size, 1 – 2 hours
- coat with olive oil and press with fingers to shape
- let rise until doubled in size again, 1 – 2 hours
- preheat oven to 450°F
- add rosemary topping onto dough
- sprinkle with coarse salt
- bake until golden, 15 – 20 minutes
- brush with olive oil
- serve
Rosemary Topping Recipe
Ingredients
- 2 tbsp olive oil
- 2 tbsp water
- 4 clove garlic, minced
- 1 tbsp rosemary, thyme, oregano, other herb, or a combination
