Rajasthani cuisine is the cuisine of the Rajasthani people, mainly in Rajasthan State of western India.

Rajasthani cuisine is similar to Gujarati and Sindhi cuisines.

Jaipur is a cultural center.

  • roti: whole wheat flatbread
  • baati: unleavened bread, generally ball-shaped; often served with ghee and dal
  • bajra khichdi: millet
  • moong dal khichdi: mung beans with spices and ghee
  • dal: lentils
  • moong dal sabzi: mung beans
  • ker sangri: desert bean and ker berry dish
  • laal maas: spicy mutton curry
  • kadhi: chickpea flour curry or gravy, sometimes lightly sweetened with jaggery
  • churma: cooked mixture of coarsely-ground ground wheat, ghee, and jaggery
