Nepali Cuisine
Nepali cuisine is the food culture of the Nepali people.
The Nepali people mainly live in Nepal, Sikkim, and northern West Bengal State of India, especially Darjeeling.
Kathmandu is a modern Nepali cultural center, though it has Newar cultural roots. Jumla is an ancient capital with a long history of Nepali settlement; rice has a long history of cultivation in the surrounding area.
Ingredients
The region is home to the highest elevation of rice cultivation in the world. Cold-tolerant Japonica rice known as jumli marshi has a long history of cultivation in the region. A red rice variety called kali marshi is grown.
Radish and mustard green are common vegetables.
