Malayali Cuisine
Malayali cuisine is the food culture of the Malayali people, mainly of Kerala State on the southwestern coast of India.
Malayalam is the main language of the region.
The Malabar Coast makes up most of the region, between the Indian Ocean and the Western Ghats mountain range.
The region is famous for its sadya(സദ്യ), or vegetarian platters, and its curries, or kari(കറി).

tamarind and lime(നാരങ്ങ naranna) are used for sour flavor

- papadum(പപ്പടം): fried dough made from black gram flour
- pickle: with mango or lime
- puliyinci(പുളിയിഞ്ചി): sweet, spicy, sour pickled tamarind chili sauce
- thoran(തോരൻ): with long bean or taro stem
- sambar(സാമ്പാർ sampar): lentil and vegetable stew
- rasam(രസം rasam): spicy and sour soup
- kutu kari(കൂട്ടുകറി): mixed curry with chickpea, coconut, and other vegetables
- kalan(കാളൻ): thick curry
- olan(ഓലൻ): subtle-flavored gourd and pea curry
- erisseri(എരിശ്ശേരി): pumpkin and red cow pea curry
- pulissery(പുളിശ്ശേരി): thin sour curry with cucumber and sometimes mango and jaggery
