Assamese Cuisine
Assamese cuisine is the cuisine of the Assamese people, mainly in the Indian state of Assam.
Guwahati is a new cultural center. Jorhat was a historic cultural center and still is a significant city.
Some foods are cooked in bamboo tubes or wrapped in banana leaves.
Ingredients
Rice is a staple food. Both indica and japonica varieties are grown in the region. A type of sticky rice called bora saul(বৰা চাউল) is also grown.
Greens and fiddlehead ferns are used.

Fish, such as snakehead, is widely used.
