Country Bread

Country bread, or choriatiko psomi(χωριάτικο ψωμί), is a simple, rustic bread from Greek cuisine. It is traditionally leavened and baked in a wood fire oven, resulting in a soft interior and crispy crust.

Greek country bread is traditionally made with fresh yeast and left to rise for a long time.

Ingredients

  • 1 tbsp active dry yeast
  • 1½ – 2 cup water
  • 4 cup all-purpose flour or whole wheat flour or combination
  • ½ tsp salt
  • semolina

Directions

  • combine yeast, water
  • let sit about 10 minutes
  • combine flour, salt
  • gradually mix in yeast water until dough forms
  • knead
  • let rise 1 to 2 hours or more
  • separate into 4 pieces
  • dust with semolina
  • bake until browned, about 15 minutes at 425°F
  • let cool
  • serve
