Chickpea Tashrib

Tashrib(تشريب) is stew over flatbread. It is a traditional food of Mesopotamian cuisine, usually made with lamb.

This vegan variation omits meat and uses chickpea as the main ingredient instead of as an optional addition. It can be partially mashed for a thicker hummus stew. Sometimes tomato and potato are added to tashrib.

Ingredients

  • 2 cup chickpea, soaked overnight and drained [substitute 4 cup canned chickpea—reduce cooking time if using canned chickpea]
  • 4 cup water
  • 4 clove garlic
  • 4 very small onion
  • 1 tsp salt
  • 1 tsp cumin powder
  • 2 dried lime(نومي بصرة)
  • tanur bread(خبز التنور), torn into pieces

Directions

  • boil chickpea, water
  • add garlic, onion, salt, cumin, dried lime
  • simmer until tender, 1 to 2 hours
  • place bread on serving dish
  • ladle stew over
  • serve
