Busiate with Trapanese Pesto

Busiate with Trapanese pesto(busiate con pesto alla Trapanese) is a durum wheat pasta with almond- and tomato-based pesto.

Trapanese pesto(pesto alla Trapanese) is named for the town Trapani on the island of Sicily, where this type of pesto comes from. Unlike some kinds of pesto, Trapanese pesto uses almonds instead of pine nuts and includes tomato. It is traditionally served with busiate pasta.

Busiate is a type pasta made from durum wheat and shaped in long corkscrews. Some say it is reminiscent of old coiled telephone cords. It is traditionally handmade by wrapping strips of dough around mauritania grass stems found in Sicily. Another straight, thin object like a skewer can be used.

Ingredients

  • 4 cups durum wheat flour(fine semolina)
  • ½ tsp salt
  • 1½ – 2 cup water

Directions

  • combine flour, salt
  • gradually mix in water until combined
  • knead into dough
  • rest dough 1 to 2 hours
  • knead
  • divide into pieces
  • shape into long strips
  • roll each strip around a reed or skewer at a 45° angle and slide off
  • heat water
  • add noodles
  • simmer until cooked
  • serve with pesto or other topping

Trapanese Pesto Recipe

Ingredients

  • ½ cup almond, blanched and peeled
  • 2 clove garlic
  • salt
  • ½ – 1 cup basil leaf
  • 1 – 2 tomato, chopped
  • 2 tbsp olive oil

Directions

  • dry roast almonds, stirring often, until lightly browned, 5 to 10 minutes
  • pound garlic, salt, almond, basil
  • mix in tomato, olive oil
  • serve over busiate or other pasta
