Brengkes is a Palembangese dish cooked in banana or similar leaf. The most typical variety uses pangasius catfish(patin) coated in tempoyak curry paste, wrapped in turmeric leaf or banana leaf and grilled. It may also be roasted or steamed.
Tempoyak bumbu, or curry paste, makes a flavorful base that pairs well with pangasius catfish. Other catfish or white-fleshed fish can be used as well. This dish uses similar ingredients to pindang tempoyak ikan patin.

Ingredients
- 2 clove garlic
- 1 tsp salt
- 1 tbsp piece galangal, thinly sliced
- 1 tbsp piece fresh turmeric
- 2 – 4 shallot, sliced
- 2 – 4 red bird eye chili
- 2 red chili, seeded and sliced
- ½ cup tempoyak
- 1 piece pangasius fish(ikan patin) [substitute other catfish]
Directions
- pound garlic, salt, galangal, turmeric, shallot, chili
- mix in tempoyak
- coat fish in tempoyak mixture on banana leaf
- wrap with banana leaf
- grill or roast or steam 15 to 30 minutes
- serve
