Binakol

Binakol is a soup with coconut water broth. It is popular among the Aklan and Ilonggo people of Western Visayas in the Philippines. Binakol is similar to tinola, though tinola does not have coconut water in the broth.

Binakol is traditionally served in half a coconut shell or in a split bamboo tube. It goes well with rice and can accompany various dishes.

ingredients

  • garlic, minced
  • shallot, chopped
  • ginger, sliced
  • lemongrass, trimmed and smashed and cut
  • salt
  • mature coconut water
  • common mushroom or oyster mushroom, chopped
  • green papaya or chayote or luffa
  • young coconut meat, grated or finely sliced (optional)
  • chili leaf or moringa leaf or water spinach or wild greens
  • chili (optional)

method

  • saute garlic, shallot, ginger, lemongrass until fragrant and slightly browned
  • add a dash of coconut water, mushroom, salt
  • add papaya, young coconut meat
  • simmer
  • add chili leaf
  • stir
  • serve
