Baladi Bread

Baladi bread(عيش بـَلـَدي eish baladi), or country bread, is a type of leavened flatbread from Egyptian cuisine.

Baladi bread is made from a rather wet dough. Dusting a baking surface generously can help prevent sticking.

Recipe

Ingredients

  • 2 cup + extra whole wheat flour or all-purpose wheat flour
  • 1 tsp yeast
  • ½ tsp salt
  • ¼ cup + ¾ cup water

Directions

  • combine yeast, ¼ cup water
  • combine 2 cup flour, salt
  • gradually mix in yeast water and remaining ¾ cup water
  • knead into dough
  • cover and rest dough until risen, about 1 hour
  • spread flour on baking surface
  • separate dough into pieces and spread on baking surface
  • rest dough about 30 minutes
  • bake until puffed up, 5 to 10 minutes at 475°F
  • flip and bake until lightly browned, about 5 minutes (optional)
  • let cool
  • serve
