Baba Ghanoush

Baba ghanoush(بابا غنوج) is a roasted eggplant dip usually seasoned with garlic, sesame, and lemon.

Baba ghanoush is similar to hummus and can also be served with pita bread or other flatbread.

Ingredients

  • 2 eggplant
  • 2 clove garlic, minced
  • 1 tsp salt
  • 1 – 2 tbsp sesame paste(tahini)
  • ½ – 1 lemon juice
  • 1 – 2 tbsp olive oil (optional)
  • 1 tsp cumin powder (optional)
  • 1 tsp paprika (optional)
  • 1 tsp parsley, finely chopped (optional)

Directions

  • roast eggplant until soft, 15 to 30 minutes at 425°F
  • let cool
  • peel and trim
  • finely chop or mash (fork works)
  • add garlic, salt
  • mix in tahini, lemon
  • chill (optional)
  • garnish with olive oil, cumin, paprika, parsley
  • serve
