Sai bhaji(سائي ڀاڄي) is a common Sindhi curry typically made with chana dal and greens such as spinach, sorrel, fenugreek greens, and dill.
Sai bhaji is usually served with rice or flatbread. It may be mashed or partially mashed when served with rice. Additional vegetables like carrot or potato can be added.

Ingredients
- 2 clove garlic, minced
- 1 tsp ginger, minced
- ½ onion, finely chopped
- 1 cup chana dal, soaked at least 30 minutes and drained
- salt
- ¼ tsp turmeric powder
- ¼ tsp cumin powder
- ¼ tsp coriander powder (optional)
- red chili powder (optional)
- 1 bunch spinach leaf or sorrel leaf, finely chopped
- ½ bunch fenugreek leaf(methi), finely chopped
- ¼ bunch dill leaf, finely chopped
- 2 cup water
Directions
- sauté garlic, ginger, onion
- add chana dal, salt, turmeric powder, cumin powder, coriander powder, red chili powder, spinach, fenugreek, dill, water
- boil
- simmer about 1 hour
- mash (optional)
- serve
