Lablabi(لبلابي) is boiled chickpeas with harissa and other toppings, generally served over dry bread. It is a popular Tunisian dish.
Toppings for lablabi usually include cumin powder, lemon, caper, olive, olive oil, harissa, poached egg, and either tuna or lamb. Sometimes caraway powder is added.
Stale bread is typically used as a base. Flatbread also works well.
Harissa Recipe
Ingredients
- 2 lb baqluti chili(بقلوطي) [substitute red new mexico chili, cayenne pepper, or even red bell pepper]
- 4 clove garlic
- 1 tsp salt
- 1 tsp cumin
- 4 tbsp olive oil
- 1 lemon juice or lime juice
Directions
- steam chili, garlic
- grind chili, garlic, salt, cumin, olive oil
- sauté (optional)
- mix in lime juice
- use or store

- 2 cup dried chickpea, soaked overnight and drained
- 4 cup water
- 4 clove garlic
- 1 tsp salt
- bread
- 1 tbsp cumin powder
- 1 lemon juice or lime juice
- harissa
- caper (optional)
- green and/or black olive (optional)
- olive oil
Directions
- boil chickpea, water
- add garlic, salt
- simmer
- break bread into serving dishes
- add chickpeas over bread
- top with cumin, lemon juice, harissa, caper, olive, olive oil
- serve
