Do Chua

Do chua(đồ chua) is Vietnamese pickles, typically daikon and carrot.

Do chua is commonly added to banh mi and other dishes.

Recipe

Ingredients

  • 1 daikon, cut into matchsticks
  • 1 carrot, cut into matchsticks
  • 1 tsp salt
  • ¼ – ½ cup cane sugar
  • ½ cup rice vinegar
  • ½ – 1 cup water

Directions

  • massage salt into daikon, carrot
  • let sit 15 to 30 minutes
  • rinse and drain
  • pack into jar
  • heat sugar, vinegar, water until mixed
  • add mixture to jar until vegetables submerged
  • marinate 1 to 3 days (optional)
  • serve or store in refrigerator
