Do chua(đồ chua) is Vietnamese pickles, typically daikon and carrot.
Do chua is commonly added to banh mi and other dishes.
Recipe
Ingredients
- 1 daikon, cut into matchsticks
- 1 carrot, cut into matchsticks
- 1 tsp salt
- ¼ – ½ cup cane sugar
- ½ cup rice vinegar
- ½ – 1 cup water
Directions
- massage salt into daikon, carrot
- let sit 15 to 30 minutes
- rinse and drain
- pack into jar
- heat sugar, vinegar, water until mixed
- add mixture to jar until vegetables submerged
- marinate 1 to 3 days (optional)
- serve or store in refrigerator
