Hot Dry Noodles

Hot dry noodles(熱乾麵) is a popular breakfast(過早) in Wuhan(武漢) and surrounding areas.

Hit dry noodles can be topped with pickled long bean(酸豆角), pickled daikon(辣蘿蔔), pickled greens(榨菜), or other additions.

Alkaline Noodles(鹼水麵) Recipe

Ingredients

  • 2 cup all-purpose wheat flour
  • ½ tsp salt
  • ½ – ¾ cup water
  • ½ tsp lye water [substitute baked baking soda water]

Directions

  • combine water, lye water
  • combine flour, salt
  • gradually mix in lye water mixture until combined into dough
  • rest dough 30 minutes
  • roll out dough
  • keep folding and rolling dough until smooth
  • rest dough 10 minutes
  • fold and roll again
  • dust with flour
  • thinly slice
  • use or store

Ingredients

  • 2 cup alkaline noodles(鹼水麵) [substitute ramen noodles]
  • 2 tbsp sesame oil(香油)
  • pickled radish(辣蘿蔔), pickled mustard green(榨菜), pickled cowpea(酸豆角), or similar topping
  • 4 tbsp sesame paste(芝麻醬)
  • 1 tbsp light soy sauce(生抽)
  • 1 tsp black vinegar(烏醋)
  • 1 scallion, finely chopped

Directions

  • mix sesame paste, water, salt for sesame sauce
  • blanche noodles, about 10 seconds
  • drain and mix in sesame oil
  • add soy sauce, vinegar, sesame sauce, pickled radish, scallion
  • serve
