Hot dry noodles(熱乾麵) is a popular breakfast(過早) in Wuhan(武漢) and surrounding areas.
Hit dry noodles can be topped with pickled long bean(酸豆角), pickled daikon(辣蘿蔔), pickled greens(榨菜), or other additions.
Alkaline Noodles(鹼水麵) Recipe
Ingredients
- 2 cup all-purpose wheat flour
- ½ tsp salt
- ½ – ¾ cup water
- ½ tsp lye water [substitute baked baking soda water]
Directions
- combine water, lye water
- combine flour, salt
- gradually mix in lye water mixture until combined into dough
- rest dough 30 minutes
- roll out dough
- keep folding and rolling dough until smooth
- rest dough 10 minutes
- fold and roll again
- dust with flour
- thinly slice
- use or store

Ingredients
- 2 cup alkaline noodles(鹼水麵) [substitute ramen noodles]
- 2 tbsp sesame oil(香油)
- pickled radish(辣蘿蔔), pickled mustard green(榨菜), pickled cowpea(酸豆角), or similar topping
- 4 tbsp sesame paste(芝麻醬)
- 1 tbsp light soy sauce(生抽)
- 1 tsp black vinegar(烏醋)
- 1 scallion, finely chopped
Directions
- mix sesame paste, water, salt for sesame sauce
- blanche noodles, about 10 seconds
- drain and mix in sesame oil
- add soy sauce, vinegar, sesame sauce, pickled radish, scallion
- serve
