Tsuivan(цуйван) is a Mongolian tossed shredded flatbread or noodle dish, typically with meat and onion.
Tsuivan traditionally has few ingredients. Mutton, yak meat, or horse meat may be used traditionally depending on what is available. This vegan variation omits meat; various vegetables or maybe even mushrooms can be added. In modern Mongolia, vegetables such as cabbage, carrot, and bell pepper are sometimes added.
In Mongolia, homemade dough is usually rolled very thin and briefly roasted on a metal stovetop before being sliced and added to steam with the other ingredients, so tsuivan can be thought of as thin slices of flatbread rather than noodles. The word tsuivan probably originated from Chinese chaobing(炒餅), meaning roasted shredded flatbread; this points to a Chinese origin of the dish.

Ingredients
- 2 cup all-purpose wheat flour
- ½ tsp salt
- ¾ cup water
Directions
- combine flour, salt
- mix in water until combined
- knead
- rest 5 to 15 minutes
- knead
- roll flat
- briefly roast on hot surface
- fold or roll
- cut into thin strips

Ingredients
- 1 onion, chopped
- ¼ cabbage, chopped
- 2 – 4 mushroom (optional)
- other vegetable such as carrot (optional)
- 1 – 2 tsp salt
- ½ cup water
- shredded flatbread or boiled noodles
Directions
- saute onion, cabbage, mushroom, other vegetable
- add salt, water
- add shredded flatbread
- simmer, covered about 5 minutes
- mix well
- serve
