Phad kratiem phrik thai(ผัดกระเทียมพริกไทย), or garlic pepper stir-fry, is a super easy traditional recipe of central Thailand. Before chilies became ubiquitous in Thailand, pepper would have been the best way to add spice and is still used in recipes like this one. The pan-cooking method and simple yet bold ingredients suggest Chinese influence or ancient Thai origins.
Here, mushrooms are the main ingredient, sauteed in spices. Oyster mushrooms work great. Most mushroom varieties will work just as well; larger ones can be chopped beforehand. Once mushrooms are cooked, you can go ahead and serve over rice or add leafy green vegetables to cook with the mushrooms until slightly wilted and serve together.
2 clove garlic
1 tsp salt
1 tbsp white pepper
4 cup oyster mushroom or other mushroom
1 cup water
• pound garlic, salt, white pepper
• mix in mushroom, water
• saute until water mostly evaporates
• serve with rice, green leafy vegetables
