This is a thick, sweet, and spicy dipping sauce made specially to go with green mango. Toasted sticky rice powder adds a unique Laotian sort of crunch and flavor.
Green mango refers to a certain tart, crisp variety of mango. It should be used before it’s fully ripe, while the flesh is still very firm. The bold, textured sauce contrasts perfectly with crispy sour mango and other sour fruits such as hog plums and starfruit.
1 clove garlic
2 bird’s eye chili
3 tablet palm sugar
2 shallot, finely sliced
2 tbsp toasted rice powder
dash hot water
2 green(sour) mango, sliced
• pound garlic, chili, salt, palm sugar
• mix in shallot, toasted rice powder, water
• serve with green mango
