long bean salad (ຕໍາໝາກຖົ່ວຍາວ—tam mak thoa yao)

Long beans, also called yard-long beans or snake beans, are an amazing ingredient! Starring in this simple and tangy salad, crispy fresh long beans are tossed with Lao spices for a perfect balance of flavors with wonderful crisp textures.

Traditionally, spices are blended with a mortar and pestle, then tomato and lime juice are added and tossed with long bean. Peanut is mixed in for extra crunch.

This type of salad is a classic Lao style known as tam som(ຕໍາສົ້ມ). Green papaya salad(ຕໍາໝາກຫຸ່ງ) is most popular. Other tam som includes green banana salad(ຕໍາໝາກກ້ວຍ), eggplant salad(ຕໍາຫມາກເຂືອ), and cucumber salad(ຕໍາໝາກແຕງ).

1 clove garlic
2 bird’s eye chili
½ tablet palm sugar (optional)
1 tomato, chopped (optional)
1 lime juice
12 long bean, chopped (option: steamed or blanched)
fistful peanut, roasted (optional)

• pound garlic, chili, salt
• add tomato, lime, long bean, peanut
• toss
• serve
