Bold ginger flavor dominates in this cha(ឆា), or Cambodian-style stir-fry. A signature Cambodian spice mix of black pepper and garlic compliment the spiciness of the ginger.
Ingredients are simply sautéed together, adding a little water to simmer briefly. Once everything has softened to the perfect texture and flavors have mixed in evenly, cha khnei(ឆាខ្ញី) is ready to be enjoyed.
1 cup ginger root, shredded
20 black peppercorn, crushed
2 clove garlic
1 tsp salt
¼ tablet palm sugar
1 cup mushroom, chopped
1 carrot, finely sliced(optional)
2 shallot, finely sliced or 4 green onion, chopped(optional)
