Rice porridge is a breakfast staple in many Asian countries. This Cambodia-style rice porridge, or babar(បបរ), captures the earthiness of mushrooms with zesty accents for a humble yet heavenly breakfast dish.

To prepare, simply cook rice with plenty of water until it reaches a porridge consistency. Salt, mushroom, garlic, and green onion are added to flavor the porridge. Herbs, chili, and lime garnish and complete the dish.

Babar phsaet works great as a one-dish meal but can also go well with sauteed greens or even fruit.

(serves 2)

1 cup rice
2 cup water
1 tsp salt
1 cup mushroom stock or water
2 clove garlic, minced
6 mushroom, chopped
2 green onion, chopped
6 sawtooth herb or coriander stalks, chopped
2 bird’s eye chili, minced
1 lime juice

• boil rice, water
• add salt, mushroom stock
• simmer 30 minutes
• add garlic, mushroom, green onion
• simmer 15 minutes
• let cool
• garnish with sawtooth herb, chili, lime juice
• serve
