This soob(ຊຸບ), a sort of cooked or stewed salad, embraces the texture and flavor of bamboo with lots of herbs and sesame. Make sure fresh bamboo shoots are prepared ahead of time to remove toxins and bitter flavor.

Bamboo soob also pairs well with eggplant and long bean; these can be added into the dish or served alongside.

Other types of soob(ຊຸບ) include long bean soob(ຊຸບໝາກຖົ່ວຍາວ), eggplant soob(ຊຸບໝາກ​ເຂືອ), and vegetable soob(ຊຸບຜັກ).

(serves 2)

1 clove garlic, minced
4 bird’s eye chili, minced
1 tsp salt
1 stalk lemongrass, minced
1 thumb galangal, minced
4 kaffir lime leaf, center removed and minced
2 green onion, chopped
1 bamboo shoot, prepared and sliced
4 stem rice paddy herb, ngo om, chopped
½ cup peanut, roasted (optional)
8 stem sawtooth herb, chopped or coriander leaf, chopped

• saute garlic, chili, lemongrass, galangal, kaffir lime leaf, green onion
• add bamboo, water, salt
• remove from heat
• add rice paddy herb
• add peanut, sawtooth herb
• serve
