bamboo shoot soob (ສຸບໜໍ່ໄມ້—soob no mai)

This soob(ຊຸບ), a sort of cooked or stewed salad, embraces the texture and flavor of bamboo with lots of herbs and sesame. Make sure fresh bamboo shoots are prepared ahead of time to remove toxins and bitter flavor.

Bamboo soob also pairs well with eggplant and long bean; these can be added into the dish or served alongside.

Other types of soob(ຊຸບ) include long bean soob(ຊຸບໝາກຖົ່ວຍາວ), eggplant soob(ຊຸບໝາກເຂືອ), and vegetable soob(ຊຸບຜັກ).
