yellow curry sour soup (សម្លម្ជូរគ្រឿង—samlo machu krueng)

Samlor machu(សម្លម្ជូរ) refers to a sour soup popular in Cambodia. Yellow curry paste, or kroeung(គ្រឿង); coconut milk; and lime juice make this soup creamy and flavorful. It can be made with variety of vegetables like luffa, eggplant, and long bean. Mushrooms are a great addition.

Serve samlor machu kroeung with rice. Herbs such as Thai basil and rau ram also pair well with this dish.


(serves 2)

2 clove garlic
4 bird’s eye chili
1 tsp salt
1 tablet palm sugar
2 shallot
1 stalk lemongrass
2 thumb turmeric
1 thumb galangal
4 kaffir lime leaf
¼ cup mushroom stock or water
½ can coconut milk
1 luffa, chopped
4 apple eggplant, chopped
8 long bean, chopped
8 mushroom, chopped
1 lime juice

• pound garlic, bird’s eye chili, salt, palm sugar, shallot, lemongrass, turmeric, galangal
• saute
• add stock, coconut milk, kaffir lime leaf
• add luffa, eggplant, long bean, mushroom
• simmer
• remove from heat
• add lime juice
• serve
